Aval Pongal


Aval pongal is a dessert made using red rice poha. Aval poha is delicious South Indian dish made with red rice poha, ghee, nuts, sugar, milk and cardamom. 

Flattened rice can be eaten raw by mixing with jaggery. It can also be served with milk, and sugar. It can also be used in snacks like sev, mixture.

Poha is also known as aval, pohe, and more names. Rice is parboiled before flattening so that it is consumed as it is or used in lite cooking with simple saute recipes like lemon poha.

Red rice poha is flattened poha made from red rice. It is high in nutrition compared to white rice flakes/poha. Flattened red rice poha is used to make various dishes like aloo poha, lemon poha, tomato poha, and more recipes.

White or red rice poha can  be used to make variety of dishes. Poha can also be used in idly, dosa batter to get fluffy soft idlies and crispy dosas. 

Ingredients:
Red rice poha-1 cup
Brown sugar-4tbsp
Cardamom powder-1/2 tsp
Cashew nuts-5
Ghee-3tbsp
Coconut-2 tbsp(optional)
Sliced badam-1/2 spoon
Dry grapes-1 tsp
Milk-3 tbsp
Edible camphor powder- a pinch
 
Method:
  • In a bowl, add required poha and wash the poha. Soak it in water for 2 minutes. 
  •  Once water absorbed from poha, It is ready to use. 
  • Add some ghee in a pan and heat it. Slightly roast shredded coconut, cashews nuts, grapes and keep aside.
  • In the same pan add some ghee and heat it.
  • Add soaked poha and saute for few seconds. 
  • Add cardamom powder, sugar and mix well. 
  • Now add some milk and cook for a minute. 
  • Add remaining ghee and roasted shredded coconut, nuts and dry fruits.
  • Add a pinch of edible camphor. Mix well and serve hot.





Note:
  • Use Country jaggery for better taste.
