Kodo Millet Mushroom Biriyani

Ingredients:
Mushroom-1 cup
Ripe tomatoes-5
Chilly powder-1 tbsp
Turmeric powder-1 tsp
Green chilies-2
Onion-1
Ghee-2 tbsp
Oil-2 tbsp
Mint leaves- 1 fistful
Coriander leaves-1 fistful
Ginger-garlic paste-1 tbsp
Cashew nuts-5(optional)
Kodo millet-1 cup
Spices:
Cloves-2
Cinnamon-2 small stick
Cardamom-2
Salt-as needed
Method:
- In a pan add some ghee, oil and heat it. Add all the whole spices, chopped onion, green chilies, ginger-garlic paste and saute for few seconds until the onion gets translucent.
- Now add chopped tomatoes, spice powders, required salt and cook until tomatoes gets mashed.
- Add some chopped mint and coriander leaves.
- Add 3-4 glasses of water and boil it. Add washed millet into the boiling water.
- Add remaining ghee, coriander and mint leaves. Cook in medium flame for 15-20 minutes. Mix slightly with spatula. Serve with onion or cucumber raita.
- Use fresh and ripe tomatoes for better taste and color.
- Use coconut milk in biriyani for variation.
- Add ghee fried cashew nuts.
