Tomato Biriyani

 

Tomato Biriyani is simple and easy one pot meal made with tomatoes. This flavored tomato rice is made with tomatoes, rice, spices, ginger, garlic, herbs, ghee and salt. 

Tomato Biriyani is made with aromatic rice(Seeraga samba) which gives more flavor and unique taste to biriyani. 

Tomato biriyani can be made with pressure cooker or in any cooking pot. Tomato biriyani is most common lunch box recipes. It is similar to tomato rice but aromatic rice and spices will give different taste for biriyani.

Ingredients:
Ripe tomatoes-5
Seeraga samba rice-2 cup
Chilly powder-1 tbsp
Kashmiri red chilly powder-1 tsp
Turmeric powder-a pinch
Green chilies-2
Onion-1
Ghee-2 tbsp
Canola oil-2 tbsp
Mint leaves- 1 fistful 
Coriander leaves-few
Ginger-garlic paste-1 tbsp
Cashew nuts-5(optional)

Spices:
Cloves-2
Bay leaves-2
Cinnamon-2 small stick
Cardamom-2
Black stone flower-1
Mace(Jathipathri)-1
Salt-as needed

Method:
  • In a sauce pan add 5 glasses of water and boil it. Soak seeraga samba rice for 5-10 minutes and add into the boiling water. 
  • Add a bay leaf, clove and small piece of cinammon stick, a spoon of oil, little salt for rice. Once rice is 80% cooked drain the excess water and keep aside.
  • In a pan add some ghee, oil and heat it. Add all the spices, chopped onion, green chilies, ginger-garlic paste and saute for few seconds until the onion gets translucent. 
  • Now add chopped tomatoes, spice powders, required salt and cook until tomatoes gets mashed. 
  • Add some chopped mint and coriander leaves. Cook for few seconds. Add cooked seeraga samba rice over the biriyani masala.
  •  Add remaining ghee, coriander and mint leaves. Cook in low flame for 5 minutes. Mix slightly with spatula. Serve with onion or cucumber raita.
Note:
  • Use fresh and ripe tomatoes for better taste and color.
  • Use coconut milk in biriyani for variation.
  • Add ghee fried cashew nuts.
