Cranberry Pickle || Cranberry Thokku
Cranberries are known as super food. It is high in nutrition and antioxidant. It helps to improve immunity. It can be consumed as juice, sauce, chutneys, pickles, used in desserts and more. Cranberries have more health benefits.
Cranberries are native to North America. This berries can be harvested in September and October month. It is available to purchase in fall season. Cranberries helps to treat UTIs. Cranberries are sour in taste.
Cranberries can be dried and used in food like salad, cookies and more. It can be used in beverages like smoothies or any cereals. Here in this recipe I made cranberry as pickle.
This pickle can be used with chapathi, bread and more foods as a spread. It is also known as thokku in tamil. It is made with South Indian style of flavors. Here goes the recipe of cranberry thokku..
Ingredients:
Sesame Oil-50- 100ml(as required)
Cranberry- 900g
Mustard seeds- 1tsp
Fenugreek seeds- 1tsp
Cranberry- 900g

Chilly powder-4 tbsp
Jaggery syrup or Jaggery powder- 2tbsp
Salt- as needed

Method:
- In a bowl add cranberries and wash with water. Use a dry towel to wipe the cranberries. Wipe the cranberries and keep aside
- In a pan add required mustard, fenugreek seeds and dry roast them until fenugreek changes color. Allow it to cool and grind it to coarse powder and keep aside.
- In another pan add some oil and heat it. Add washed & wiped cranberries and sauté for few minutes till it gets soft.
- Now add required salt, turmeric and chilly powder. Mix well and allow it to cook for another 5 minutes. Add some hot oil if it gets dried.
- Mash the cranberries with masher. Mix well and cook till oil seperates from it. Add jaggery syrup or jaggery powder and mix well.
- Now add ground powder and mix well. Add curry leaves and give a stir. Now cranberry thokku is ready to serve. Serve this thokku with chapathi, bread, rice, idli & dosa.
