Vegetable Biriyani
Vegetable Biriyani is a flavorful rice made with basmati rice, spices, & vegetables. Biriyani is one of easy one pot meal recipe. Biriyani recipes are made in pressure cooker, Instapot and any heavy base pot especially for dum Biriyani.
This is traditional method of cooking vegetable biriyani with layers of vegetables, spices and aromatic rice, crispy golden deep fried onions and herbs which gives flavor to biriyani.
Ingredients:
Carrot -2
Beans-8
Peas-1 cup
Mushrooms-5
Onion-1
Tomato-2
Green chilies-2
Red chilly powder-1tsp
Salt - as needed
Oil-3tbsp
Ghee-2tbsp
Basmati rice-2 cups
Spices:
Bay leaf-1
Cloves-4
Cinnamon-1 stick
Cardamom-2
Jeera-1/4tsp
Ginger-2 inch
Garlic-6 cloves
Mint & coriander leaves-1cup
Method to cook rice:
- Soak basmati rice for 10-15 minutes. Boil basmati rice in 5-6 cups of water in a vessel.
- Add cloves, Jeera, few mint and coriander leaves, salt and a spoon of oil.
- Cook the rice till 80%( that means rice is almost cooked). Drain the rice and keep aside.
Method for ginger garlic paste:
- In a mixer jar add ginger, garlic, cloves, cinnamon stick and grind it to a coarse paste and keep aside.
Method for Biriyani:
- In a pan, add some ghee, oil and heat it.
- Add sliced onion, green chilies, 1 tbsp of ginger-garlic paste and spices.
- Add tomatoes when onions are translucent.
- Cook till the tomatoes are mushy. Add little salt and mix well.
- Add the veggies, chilly powder, some mint and coriander leaves.
- Leave it for 5 minutes to cook the vegetables.
- Add the rice and mix it. Check for salt. Cook in low flame.
- Once the rice is cooked fully add the remaining mint leaves, lemon juice and a spoon of ghee. Serve.
