Peanut Salad


Salad is quick and easy to make recipes with your favorite vegetables, fruits, nuts, and greens. A bowl of salad for breakfast makes you lite and healthy. Here I added my favorite vegetables, peanuts and some spice powders for my salad recipe. Peanuts can be replaced with any beans, nuts or legumes. Here goes the recipe...

Ingredients:

Peanuts -1cup

Lettuce-1 leaf

Carrot-1(small size)

Cucumber-1

Coriander leaves-handful

Coconut-1 tbsp(shredded)

Coconut oil-1 spoon

Onion-1

Raw mango-1 or 2 slices

Cumin powder-1/4 tsp

Pepper powder-1/4 tsp 

Chaat masala- a pinch

Lemon juice-1 tbsp

Salt-as needed 


Method: 

  • Soak raw peanuts overnight and pressure cook with required salt for 3-4 whistles. 
  • In a bowl, add peeled and grated carrot, finely chopped coriander leaves, lettuce, raw mango, onion, shredded coconut and boiled peanuts.

  • Add a spoon of coconut oil and mix well. Now add peeled and chopped cucumber into the mixture.
  •  Finally add a pinch of chaat masala, cumin powder, pepper powder, lemon juice and mix well. 
  • Serve this healthy salad  snack.
