Drumstick Leaves| Moringa leaves chutney



Drumstick leaves is known in various names as Moringa leaves, horseradish leaves, Ben oil tree leaves. It is rich in antioxidants. 


Moringa leaves can be shade dried and used. It’s nutritional content increased by over 10 times so shade dried leaves have high nutritional value than fresh leaves. Fresh moringa leaves are rich in vitamin C. 


Drumstick leaves chutney is made using shadow dried drumstick leaves, spices, garlic, tamarind and coconut. Drumstick leaves are rich in iron and vitamins. Here I used shadow dried Moringa leaves. Moringa leaves chutney tastes good with dosa, idli and rice recipes.  


 

Ingredients:

Moringa leaves-1 cup(shadow dried leaves)

Garlic-3 cloves

Red chilies-3

Channa dal-2 tbsp

Urad dal-1 tbsp

Shredded coconut-2 tbsp

Coriander seeds-1 tbsp

Cumin seeds-1/2 tsp

Tamarind-small gooseberry size

Whole black pepper-2

Salt-as needed

Cooking oil- 2 tbsp

Mustard & Urad dal-1 tsp

 

Method:

  • In a pan add a spoon of oil and heat it. 
  • Add channa dal, urad dal, red chilies, garlic and roast well. 

  • Roast till it changes golden brown and keep aside.
  • In medium flame, add Moringa leaves and roast them till aromatic.
  • Set aside to cool completely.


  • Add the roasted ingredients, shredded coconut, tamarind, cumin seeds, pepper, coriander seeds and salt in a mixer jar. 


  • Add required water and grind it to a coarse paste. Finally heat a spoon of oil in a pan. 
  • Add mustard, urad dal. Fry until Urad dal turns golden brown. Add red chilies and curry leaves.
