Oats – 5 tbsp (coarsely ground)

Mixed vegetables – 1 cup (carrot, beans, sweet corn, peas, capsicum)

Oil – 1 tbsp

Mustard seeds – ¼ tsp

Urad dal – ¼ tsp

Cumin seeds – ¼ tsp

Green chilies – 2 (finely chopped)

Garlic – 2 pods (chopped)

Onion – 1 (finely chopped)

Turmeric powder – ¼ tsp

Pepper powder – ¼ tsp

Herb seasoning – ¼ tsp (optional)

Salt – as needed

Water – 2 cups (adjust as needed)

Method:

  • Heat oil in a pan. Add mustard seeds and urad dal. Let them splutter.
  • Add cumin seeds, green chilies, garlic, and onion. Sauté until onions turn soft.
  • Add turmeric powder, pepper powder, and chopped vegetables. Sauté well for 2–3 minutes.
  • Add salt and water. Let it boil for 5 minutes until vegetables are cooked.
  • Add coarsely ground oats and mix well to avoid lumps.
  • Add more water if needed and adjust salt.
  • Stir continuously until the oats thicken and reach soup consistency.
  • Add herb seasoning, mix well, and switch off the flame.
  • Serve hot.
