Kodo Millet/Varagu arisi Vegetable Biriyani
Kodo Millet has the highest dietary fiber among all the millets. It is easy to digest. It is rich in B vitamins.
Kodo millet is gluten free. Regular consumption of this millet is beneficial for people with high blood pressure and high cholesterol levels.
Kodo Millet is a nutritious grain. It is good substitute for rice or wheat.
Ingredients:
Ghee-2 tbsp
Mint leaves-few
Coriander leaves-few
Ginger-garlic paste-1 tsp
Small onion-2
Ripe tomatoes-2
Vegetables-1 cup(Carrot, beans, cauliflower, Lima beans)
Salt-as needed
Green chilies-2
Turmeric powder-1 pinch
Varagu/kodo millet-1 cup
Water -2 1/2 cups
Spices:
Bay leaf-1
Black stone flower/kalpasi-1
Cinnamon-1
Cloves-1
Cardamom-1
Cumin seeds-1 tsp
Method:
- In a pan, add some ghee and heat it. Add cumin seeds, spices, chopped onions, ginger garlic paste, green chilies, tomatoes one by one and saute well.
- Now add chopped vegetables, turmeric powder and salt. Check for salt and add cleaned kodo millet and required water.
- Now add mint & few coriander leaves.
- Close the lid and allow it to cook for 10 min in medium flame and switch off.
- Finally add remaining coriander leaves and ghee. Serve hot with onion raita.
