Aapam


 Aapam is one of healthier breakfast recipes. It is a popular  breakfast in Tamilnadu and Kerala. Aapam is a healthy pancake, soft in the center and crispy in the sides.

 Aapam batter is made using rice, urad dal, coconut, fenugreek and salt. The batter should be fermented to make aapam. 

Aapam can be served with coconut milk or kadalai(black channa)/chickpeas curry, vegetable kuruma. 

Aapam is best combination with sweetened coconut milk. It is delicious side dish most popular in Tamilnadu. 

Aapam with kadalai curry is popular in Kerala and Tamilnadu. Aapam can also be served with non-vegetarian curries like mutton paaya. 

Ingredients:

Raw rice-1 cup

Sona masoori rice-1 cup

Urad dal-1/4 cup

Fenugreek seeds-few 

Salt-as needed

Coconut-1/4 cup(shredded)

Method:

  • Firstly wash and soak the rice and dal for 3-4 hrs and grind it to batter consistency. Add coconut while grinding the rice.
  • Once the batter is grounded, keep it aside for fermentation. It takes 4-5 hrs for fermentation. It depends on the weather. If you want a good aapam, batter should be fermented properly.
  • Heat the aapam pan and pour a laddle full of batter and rotate the pan to spread the batter. The pan should not be too hot.
  • Cover the pan with a lid and cook for few seconds. Aapam is cooked well and soft in the center and thin crispy in the sides of pan.
  • Now aapam is ready to serve. Serve aapam with side dishes like kadalai curry, vegetable kuruma or coconut milk or any chutneys like coconut, tomato-garlic  chutney.
