MASALA VADA/PARUPPU VADA
Masala vada(chana dal vada) is a famous South Indian snack. It is served as Tea time snack. Masala vada is flavorful and healthy snack made with chana dal, spices, onion, chilies & herbs. This spicy lentil vada is deep fried or shallow fried snack served as starters with coconut or mint chutney.
Ingredients:
Chana dal-1 cup(100 gm)
Yellow split peas-2 tbsp
Cloves-2
Cinnamon-1
Garlic cloves-4
Mint leaves-1 handful
Curry leaves-few
Ginger-1 inch
Fennel seeds-1 tbsp
Coriander leaves-1 handful
Big onion-1
Red chilly-1
Green chilies-2
Oil-as needed (deep fry)
Salt-as needed
Method:
- Soak chana dal and yellow split peas together for 2 hours.
- Add dal, cloves, cinnamon, red chilly, fennel seeds, ginger, and garlic to mixer jar and grind it to a coarse paste. Save few chana dal to add before making vada.
- In a mixing bowl add chopped onion, green chilies, mint, coriander leaves, curry leaves, salt, coarse ground paste, and remaining chana dal. Mix well and keep aside.
- In a pan add some oil and heat it. Apply some oil in your hands to avoid stickiness in hands.
- Now take some vada mixture and make it as round shape and flatten it.
- Drop the flattened vada mixture in oil one by one.
- Flip to the other side and deep fry till it turns to golden brown and crispy.
- Transfer them to a plate and serve hot with chutney or sauce.
