Ingredients:
For Poha
Red poha – 1 cup
Green chilies – 2 (chopped)
Lemon juice – 2 tbsp
Ginger – 1 tbsp (shredded)
Small onions – 2 (chopped)
Peanuts – 20
Turmeric powder – ¼ tsp
Mustard seeds & urad dal – 1 tbsp
Curry leaves – few
Coriander leaves – few
Oil – 2 tbsp
Salt – to taste

For Potato Fry
Potato – 1 (chopped)
Hing (asafoetida) – ½ tsp
Salt – ¼ tsp
Chili powder – ¼ tsp
Oil – 2 tbsp

Method

Step 1: Prepare Poha
  • Wash the red poha gently.
  • Soak it in water for 2 minutes.
  • Once the water is absorbed, fluff it gently and keep aside.
Step 2: Potato Fry
  • Heat oil in a pan.
  • Add chopped potato, chili powder, salt, and hing.
  • Mix well, cover, and cook for 2 minutes until lightly golden.
  • Switch off the flame and keep aside.
Step 3: Aloo Poha
  • Heat oil in another pan.
  • Add mustard seeds and urad dal; let them splutter.
  • Add green chilies, onions, ginger, peanuts, and curry leaves. Sauté well.
  • Add turmeric powder and salt.
  • Add soaked red poha and mix gently.
  • Add fried potatoes and mix.
  • Switch off the flame.
  • Add lemon juice and garnish with coriander leaves.
