Egg masala || Egg gravy


Egg masala gravy is simple, quick Indian dish made using boiled eggs, spices, herbs, tomatoes and onions. Egg masala gravy is best side dish for lunch box recipes. 

Eggs are a good source of protein and vitamins. It is highly nutritious and can be taken anytime in a day as breakfast, snack, lunch or dinner in any form of egg recipes. Even the boiled eggs are perfect and simple way to include in every day meal.

 Egg masala is medium spiced and delicious side dish for chapathi, pulao, variety rice, jeera rice, coconut milk rice and more. It is quickly made in minutes. Here goes the simple method of egg masala..

Ingredients:

Egg-5
Big onion- 1
Ripe tomatoes-2
Ginger garlic paste-1 tsp
Green chilies-3
Curry leaves-few
Garam masala-1 tbsp
Turmeric powder-1 tsp
Chilly powder-1 tsp
Mustard & urad dal-1 tbsp
Salt-as needed
Oil-3 spoon
Coriander leaves-few

Method:

  • In a sauce pan add some water and heat it and reduce the flame to medium high. Add raw eggs and boil for 10-12 min. 
  • Remove the shell and cut the boiled eggs into two halves. Keep it aside.
  • In a cooking pan add some oil and heat it. Add mustard, urad dal, green chilies, curry leaves one by one . Saute for few seconds. 
  • Add finely chopped onion, ginger garlic paste, salt. Firstly add the onions and salt. Saute the onions till it gets transparent. Then add ginger-garlic paste and cook till raw smell goes off. 
  • Add chopped tomatoes, spice powders and mix well. After adding the tomatoes and spice powders cook in a low flame to get off the raw smell from masala and tomatoes will be soft and gets the texture of the gravy. 
  • Cook for 5 minutes till tomatoes are soft and mushy. At that time oil will separate from gravy.
  • Once the gravy is almost ready, check for salt. Add if required. Add one or two spoons of water if required.
  • Now add boiled eggs. Reduce the flame to simmer. Mix slightly without breaking the eggs. Add some coriander leaves and serve.
  • Serve this spicy egg masala as side dish for roti, curd rice, sambar rice, plain rice, rasam rice and dosa.
Note:
  •  Vegetarians use the same method with potatoes.
