Lemon poha
Poha is known as flattened rice or beaten rice used for breakfast, snack and dinner. It is easily digestible and very popular across India.
Poha is used for various dishes like desserts, dosa, idli, upma, soups and so on. It is steam cooked and can be used in plenty of recipes.
Red rice poha is flattened poha made from red rice. It is high in nutrition compared to white rice flakes/poha.

Ingredients:
Red poha-1 cup
Green chilies-2
Lemon juice -4tbsp
Roasted cumin & pepper powder-1 tsp
Small Onions-4(finely chopped)
Peanuts-10
Turmeric powder-1/4 tsp
Mustard & Urad dal-1 tbsp
Curry leaves- few
Coriander leaves-few
Oil-2tbsp
Method:
- Wash the poha and soak with water for 2 minutes. Once water absorbed. It is ready to use.
- In a pan, add some oil and heat it. Add mustard, urad dal, chopped green chilies, onions, peanuts & curry leaves one by one and saute well.
- Now add turmeric powder & salt. Then add red poha, roasted cumin & pepper powder and saute well.
- Switch off the flame.
- Add lemon juice and coriander leaves and mix well.
- Serve hot.
