Tomato Rice


Tomato rice is simple South Indian rice recipe made using tomatoes, herbs and spices. Tomato rice is easy and healthy lunch box recipe. Tomato rice is mild spicy and tastes yummy. Tomatoes are rich in vitamin C.  

Tomato rice is quickly made meal anytime. It is cooked in many different ways as tomato pulao, tomato rice, tomato biriyani and more. Each method have some different taste depends upon the spices. Here goes one method of tomato rice recipe…

Ingredients:
Ripe tomatoes-3
Garlic-6(crushed)
Green chilies-3
Onion-1
Turmeric powder-1 tsp
Chilly powder-1 tsp
Garam masala-1 tsp
Salt-as needed
Mustard & Urad dal-1 tbsp
Curry leaves-few
Sesame/Groundnut oil-3 spoon
Coriander leaves-few
Cooked rice-1 cup

Method:

  • In a pan add some oil and heat it. 
  • Add mustard, urad dal, curry leaves and let it sputter for few seconds. 
  • Add chopped onion, green chilies, crushed garlic, salt and saute for few minutes. 
  • Now add chopped ripe tomatoes, spice powders and mix well. 
  • Let it cook for 5 minutes. Reduce the flame and wait till tomatoes are mushy. 
  • Check for salt. Add some chopped coriander leaves, cooked rice into tomato masala. 
  • Mix the rice evenly with tomato gravy. Serve hot tomato rice with raita, chips or potato fry.
