Carrot paniyaaram
Paniyaaram is one of famous South Indian breakfast recipes. paniyaaram is made with fermented rice and urad dal batter/Idly-dosa batter.
Paniyaaram is known as spicy dumplings which is round in shape. Here in this recipe carrot spicy dumplings are made by adding carrots, herbs, onions and spices. Adding stir fry carrots and spices gives great taste to paniyaaram.
Very soft and delicious hot dumplings can be served with coconut chutney or any spicy chutney gives great combination to dumplings.
Ingredients:
Rice batter-1 cup
Carrots-2
Green chilies-2
Red onion-1
Curry leaves-few
Hing-1 tsp
Mustard & urad dal-1 tsp
Chana dal-1 tbsp
Turmeric powder-1 tsp
Chilly powder-1 tsp
Coriander leaves-few
Salt-a pinch
Method for carrot stir fry:
- In a pan add some oil and heat it. Add mustard, urad dal, Chana dal, hing, curry leaves one by one and saute for few minutes. Add chopped onion, green chilies and saute till it gets translucent.
- Add shredded carrots and cook for few minutes. Allow it to cool. Add the stir fry mixture in the batter and mix well.
- Heat the paniyaram pan and add some oil in each mold. Fill each mold with required batter and close the lid for 2 min.
- Keep the burner in medium flame. Use a flipping stick to turn the spicy dumplings to cook on the other side.
- After a minute use a spoon to take out the dumplings and transfer to a plate.
- Make required amount of dumplings you need.
- Serve this paniyaaram with spicy chutneys like tomato chutney, moringa leaves chutney, tomato garlic chutney, mint chutney or coconut chutney.
- Use brown rice batter, Jowar batter or any multigrain batter instead of white rice batter.
- Add coconut for better taste.
